Despite numerous coffee shops sprouting at almost every other corner in Manila, most of the time my palate is unsatisfied. I still prefer coffee we make in the morning, usually drip, sometimes aero-pressed. Coffee for me is not sour, as with most blonde roasted cups served in a lot of third-wave coffee shops nowadays.
When Toby’s Estate launched in the Philippines, I honestly pre-judged it as something like Starbucks or CBTL – you know, places where people don’t actually enjoy just plain coffee. The concoctions mattered more than the coffee itself. One evening, we were walking down the High Street area and thought we could sit down and read our books. We decided to try the Toby’s Estate branch at Shangri-La the Fort.
The shop was fun, with very Pinterest-y choices for wall art. Music was alright but of course nothing can drown out those coffee grinders and espresso machines.
We got a long black, of course.
At the first sip, my husband’s eyes lit up just a teeny bit, and handed the cup over to me and said, “You’ll like this.” He makes our daily coffee so he knows.
Indeed, I loved it. I have no idea about how much better these single-origin coffees are, but all I know is that it is properly extracted.
Hubby ordered a brownie called Bucky’s which looked uninterestingly plain, but once you taste it, you’ll understand why there are stacks of it on the chilled shelf. It just pairs wonderfully with coffee.

I, on the other hand, could not resist a bagel. (I’m not a sweet-tooth.) They were out of plain ones, but they had wheat–which was even more preferred! I got a serving of garlic(?) and chives cream cheese with it, too.
At that point, I have officially declared Toby’s Estate as my new favorite cafe.
A finished the coffee too soon, and I didn’t want to order another long black. I saw a promo for their cold brew so we got that. It’s so redundant, but I loved it too! I wish though we asked for just a little or no sugar.
I’d definitely come back. Order everything we had, and maybe try some of their pastas too.
