Here’s the ‘after’ photo of the roasted veg, I drizzled olive oil and lightly seasoned it with salt, pepper and garlic powder. Husband commented, “I still can’t get over these roasted vegetables.” I guess we feel the same way! ☺️ . Second photo is our actual meal for today: brown rice, chicken kebabs and roasted veg. Love how simple and easy this dish was, cooked in just 20mins in the oven. . (Kebabs were pre marinated from Woolies.)
On Saturdays I find myself doing easy bake recipes so I’d have more time to do other things. Like today I’m just using the oven to cook kebabs and a tray of these veggies to go with it. (Also I am still marvelling over roasted veggies, coming from a country where veggies are usually in soups, stews or stir-fried dishes!) Here’s me done with lunch prep as early as now before we head to the recycling centre to drop off styro (I’m sorry mother earth), and pick up groceries on the way back. Can’t wait to see these #broccoli #carrots and #zucchini roasted beautifully.

In my life, I never imagined I’ll do a homemade version of my second favorite Filipino food— #tocino —mostly because I really liked Pampangas Best; but now I have no choice but to make some. I’m so happy to make this batch, no preservatives, no food colouring. Cured for three days, frozen for another couple of days. This is the start of me trying to make the best version (according to my tastebuds, of course) of tocino!
Good morning! We don’t have breakfast on most days but on Sundays we pancake. But we woke up to a -2° temp so it’s making me crave all things ‘comforting’. Here’s me wishing to skip to the weekend so we can whip up #pancakes again! 🥞 . I sincerely didn’t know making pancakes were so easy, even my husband thinks so! (This was his try last Sunday.) I think we’re ready to make fancier ones, what do you like added on your pancakes? . PS Growing up with maple-flavoured syrup, finally trying real ones is awesome! 🍁 Thanks Canada 🇨🇦
So this is what today’s lunch looked like: Baked Hoisin Drumstick, Brown Rice and Roasted Cauliflower and Carrots . I should remind myself to cut carrots into bigger chunks so they don’t die and burn (though they’re still yummy), and omg I have just been introduced to a different world of cauliflower. I will definitely make these again but maybe slightly lower temperature. . Cauliflower was tossed in lemon juice, olive oil, garlic powder, salt and pepper. Baked at 200° fan forced for 30mins (maybe I’ll do 180° fan forced next time).
Prepping today’s lunch—Baked Hoisin Drumsticks. My hormones got me making spamsilog (spam-fried egg-garlic rice) yesterday and I feel so guilty so here I am making a decent dish today. I’m making roasted cauliflowers too! What are you cooking today?
Today I taught my husband to cook. For breakfast we made pancakes, and for lunch/dinner (we eat twice a day) we made mashed potatoes and baked lamb ribs. Easy ones for now, or else he might not want another session! What easy meals should I teach him next?
