Spaghetti and Meatballs, anyone? Complete with a garlic buttered toast. I’ve never done meatballs but my officemate’s partner had his own recipe that I just had to try. Also...I’ve just learned about #passata which is basically a tomato purée, used it instead of your off the rack pasta sauces! I don’t think I’ve eaten a #grapefruit when I was in Manila, quite possibly because they’re quite pricey. And I’m ever so happy that it’s very much accessible here. It’s bitter and sour, it makes me feel like I’m srsly eating something healthy!
So I have just been exposed to the world of #yoghurt and now I always make one small jar of yoghurt with chia seeds and keep it in the fridge. (Also a welcome to chia seeds moment for me.) We have this as a snack, dessert or even dinner: mixed with frozen berries, nuts, muesli and all even cereal. A whole new world, like Aladdin sings. What’s your favourite mix?
Over the weekend we practised driving on the other side of the road (so confusing tbh), so I convinced the hubby to drive to the eastern suburbs and get bagoong! Yes, 1.5 hours drive for these goodies. Pinakbet is def on this week’s lunchbox menu.
This week in meal prep: Cajun Marinara Mix with potatoes and carrots. Lunchbox prep never felt so exciting!
Here’s the ‘after’ photo of the roasted veg, I drizzled olive oil and lightly seasoned it with salt, pepper and garlic powder. Husband commented, “I still can’t get over these roasted vegetables.” I guess we feel the same way! ☺️ . Second photo is our actual meal for today: brown rice, chicken kebabs and roasted veg. Love how simple and easy this dish was, cooked in just 20mins in the oven. . (Kebabs were pre marinated from Woolies.)
On Saturdays I find myself doing easy bake recipes so I’d have more time to do other things. Like today I’m just using the oven to cook kebabs and a tray of these veggies to go with it. (Also I am still marvelling over roasted veggies, coming from a country where veggies are usually in soups, stews or stir-fried dishes!) Here’s me done with lunch prep as early as now before we head to the recycling centre to drop off styro (I’m sorry mother earth), and pick up groceries on the way back. Can’t wait to see these #broccoli #carrots and #zucchini roasted beautifully.
