Some weekends, we go to our parents’ homes to join them for Sunday lunch. One time I brought home roasted chicken, but dad has prepared (a.k.a. bought) a lot of food so we had a lot of leftovers.
After cleanup, he asked me to make Egg Salad with chicken, and motioned at the leftovers. Before I got into baking chicken breasts on weekends for our salads’ weekly supply, we used to make salads that didn’t have meat. The Filipino in me trying to find “ulam” in everything was craving meat; even tuna would have been better.

Salad making is exciting alright, but it’s so hard to stay well-stocked, or try new ingredients because you almost always need just a little bit of everything. I always am left with a little bit of this, a little bit of that.
So I was trying to finish up what we have left in the fridge, and found out we still had three green apples, and an opened pack of feta. When A started asking for more salads in our daily meals, I knew this was gonna be a culinary skill I need to learn if I want to keep making healthier meal plans.
Sure, it’d be easier to buy several bottles of salad dressing, but then I’d never learn how to make from scratch. Also, given that salad dressings are quite expensive here in a non-salad eating country, I wouldn’t want to be stuck with a bottle of dressing that I ended up not liking.
